Sometimes as a blogger there is an embarrassment of riches. I could chat about Britney, Kevin and those two unfortunate boys who should just be given to someone who has intelligence and adult-like behaviours. I could blog about John Tory and the stupid political move he has just made in the fading days of the election campaign here in Ontario.

This was our day a year ago . . .
When I woke up this is what I saw:
After breakfast we hopped into the car and drove to Pisa where (after getting lost in the city) we visited the 'field of miracles'.
To be honest we were rather underwhelmed with Pisa. We got back into the car and headed to Lucca where we were overwhelmed!
We had an amazing lunch:
and then wandered about this magnificent town. Paul and I climbed the tower for an incredible view of the city.
It is safe to say that we wish we were back in Italy NOW! I guess that we have to wait until we go back to Italy in May.
Last night we invited mom over to dinner. Paul and I had planned an Italian meal to commemorate our trip to Italy. We drank one of the three remaining bottles of wine we have left from the trip (and wished we had brought back more!). We talked about our favourite things about the trip . . the only thing which would have made it better would be if Rose had been here to commemorate as well!
We started off with pumpkin ravioli. Paul and I had made it the evening before and froze it. Once it was cooked, I tossed it in butter and fried sage leaves. I topped it with fresh parmagiano and it was a simple but amazing pasta.
The main course was a recipe from the Williams-Sonoma cookbook Italian Favorites: braised lamb shanks with white beans. This was truly amazing. The lamb cooked for two hours in a flavourful sauce and then the beans and lamb cooked together for an hour. We each had a shank topped with a mixture of italian parsley and lemon zest served on a bed of stewed beans. WOW I served sauteed swiss chard on the side.
Dessert was the apple torte with raisins and pine nuts which I blogged about yesterday. It must have been good because Paul ate three pieces!
These dishes typify what I have come to think of as classic Italian cooking - simple, fresh ingredients which come together to make an amazing meal!







I was there in spirit! I have been remincing for the past week, looking at our pictures and wishing I was in Italy once again.

Well Rose - you shall have to save your pennies and go back! It is amazing how a place can 'grab you' and not let go isn't it?
