When we were at the market last week we saw some blackberries (the fruit, not the electronic device) being offered for 5 packages for $ 5. Even though I wasn't sure what I would do with them I scooped up 5 containers - this was a great price!
Today was a department meeting at work so I thought I'd try and combine baking treats for my colleagues with blackberries. I came up with this recipe for Blackberry Streusel Muffins. Apparently they were good because they all got eaten. They were easy to make and looked impressive coming out of the oven.
I used sliced hazelnuts in the streusel.
Blackberry Streusel Muffins
1 1/2 cups flour
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1 egg
3/4 cup milk
1/4 cup oil
1 tsp lemon juice
1/2 tsp vanilla
2 cups frozen blackberriesStreusel topping (recipe below)
Grease 12 muffin cups, or line with paper cups.
Mix dry ingredients in a bowl. In a seperate bowl beat the egg, then add milk, oil, lemon juice and vanilla, mixing well. Pour wet ingredients into dry ingredients' bowl. Stir until just moistened - lumpy batter is good. Stir in blackberries.
Spoon batter into muffin cups until 2/3 full. Sprinkle streusel topping on each muffin. Bake in preheated oven at 400 degrees for 18 minutes or until toothpick inserted in center comes out clean.
Streusel topping:
3 Tbsp flour + 3 Tbsp brown sugar + 1/2 tsp cinnamon + 2 Tbsp butter + 2 Tbsp chopped nutsMix until crumbly.
We had a plethora of blueberries on the weekend and made a similar streusel muffin recipe. Yum! The aroma actually lured my teenage daughter out of her room. 8)

Jerry blackberries combine really well with apples.
Growing up in the UK blackberry and apple pie was a summer favourite.

Man, at our meetings there is nothing, nada, zilch in the snacking department unless I bring something... and I am just a mucky muck in the group!
You need to give my principal some lessons in this area!

Sheena - thanks for that. I still have three baskets to use. I may dump them in the freezer for future use.
Eden - the number rule for meetings is serve food! Lots of it (this is why Palma and I get along so well LOL). I won't tell you what else I made but let's say folks seemed to be purring. Fruit, yoghurt, and homemade granola for me - they enjoyed the baked goods.

Kayte - lucky you to have a supply of fresh blackberries on hand. I wish they were more plentiful here. I will have to get to a farmer's market next weekend to see what I can find.
