In our attempt to eat healthier, Paul and I have tried to add some fish to our weekly diet. Mom tells me that I should have three meals of fish a week. Frankly, one is all I can manage right now. One is pretty impressive for a kid who had cardboard fish sticks as a child and has never recovered. Yes, I blame childhood nightmare cooking for my inability to eat fish.
Anyway, I digress (long-time readers feel free to insert 'what else is new?' here).
This recipe is from Cooking Light. It is quick, easy, and tasty - a winning combination for a week-night meal. Don't be fooled though, the taste is sophisticated enough that you will want to serve it to company as well.
We made this under the broiler but as soon as the snow melts off of the grill I will be trying it outside to see if it is ever better cooked over flames.
The best thing about this entree? Only 329 calories (and the fats are good fats!)

Mustard-Maple Salmon
3 tablespoons Dijon mustard
3 tablespoons maple syrup
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
4 (6-ounce) salmon fillets (about 1 inch thick)
Cooking sprayCombine first 5 ingredients in a large zip-top plastic bag; add salmon. Seal and marinate in refrigerator 20 minutes.
Prepare grill or broiler.
Remove salmon from bag, reserving the marinade. Place salmon on a grill rack or broiler pan coated with cooking spray, and cook for 6 minutes on each side or until the fish flakes easily when tested with a fork; baste salmon occasionally with the reserved marinade.

Enjoy! We used my friend's maple syrup for this Barbara and it was brilliant. I imagine that it would taste so much better with the fresh salmon that you get Cindy.

Sounds like a delicious recipe! But I am surprised that you are not a fish lover - you are such a gourmet so I am surprised that there is something that you'd rather not eat!

What can I say Chiocciola - I blame my upbringing. There were some things that I was bothered by as a kid - fish, squash, and turnip being the three I remember the most. I ahve conquered squash and fish. I guess I have to work on turnip next.
