A number of years ago Janet and Greta Podleski self-published a cookbook (Janet even selling her wedding dress to help pay for the publishing costs) that featured low-fat recipes that were quick and easy to make. They now have four best-selling cookbooks, a show on the food network Canada, and ready made products at Costco.
The only thing I don't like about their recipes is the damn cute names that Janet dreams up for them (Greta develops the actual recipes). Folksy and cute to the extreme the names cause me to want to turn away. I know that the recipes themselves are good so I persevere!
This one is a good example - Whistle While You Wok.

Anyway, it makes an interesting stir fry that is packed with fresh veggies, chicken, and delicious sauce. Paul whipped this up the other week and we were purring in no time (so long as I dulled my senses to the cute name LOL).
8 oz Whole wheat rotini pasta
Sauce:
1/2 cup OJ
1/3 cup Hoisin sauce
2 tbsp reduced sodium soy sauce
1 1/2 tbsp Cornstarch
1 tbsp Grated gingerroot
1 tbsp Toasted sesame oil
1 tsp Minced garlic
1/4 tsp Crushed red pepper flakes
Stir Fry:
4 boneless, skinless breasts, cut into strips
2 cups Broccoli florets
2 cups halved, medium-sized mushrooms
1 large red bell pepper, cut into strips
1/2 cup frozen green peas
1/3 cup coarsely chopped green onions
10 fresh basil leaves, chopped (we used Thai basil from the garden)
Cook the pasta according to package directions. Drain. Rinse with cool water to stop the cooking. Set aside.
Whisk together the sauce ingedients.
Spray a non-stick wok with cooking spray and place over high heat. Add the chicken and cook, stirring often, until the chicken is lightly browned on the outside and no longer pink in the middle. Add broccoli, mushrooms, and red pepper. Cook and stir until vegetables are tender-crisp - about 6 minutes. Add 1/4 cup water to prevent sticking, if necessary. Add peas and onions.Cook 1 more minute. Add sauce and basil. Continue cooking until the sauce is bubbly and thickened - about 1 minute. Add rotini and cook 1 more minute - ust enough to heat the pasta again.
Serve hot.
