The peaches have been particularly delicious this year - it must be the long, hot summer.
When the first peaches come in I always make this salsa as one of my first kitchen activities. I NEVER make it while they a e out of season - the results frankly suck. If you want flavour wait until you have access to delicious, fresh from the tree peaches and dig in.
There are folks who enjoy this salsa with nacho chips. I tend to use it as an accompaniment with grilled meats. When I made this it was to serve with a grilled, honey-brined turkey breast roast. It is also wonderful with grilled salmon, pork, and chicken.
Recipes like this are flexible - want it hotter . . .add more jalapeno. What more crunch, throw in some red pepper. Like moe acid . . . more lime juice. You get it.
I suggest you whip some up while peaches are still available.
4- 5 fresh, ripe peaches (washed & diced)
1 bunch of cilantro chopped
1/2 red onion diced
1 small jalapeño diced
juice from one lime
salt to taste
Pinch of Sugar
MIX IT ALL UP! … that’s it!!!!
