Sunday Eats

Yesterday we ate well. There was a dusting of snow coming down so we 'hibernated' in front of the fireplace. It was one of those rare days when we didn't leave the house all day!

This is NOT an example of diet food.

Polenta 'Lasagne'

A few weeks back I had posted in the slow trav board about what to do with some leftover polenta. Alice, a poster from Italy who knows some wonderful things about food, suggested layering it with some cheese and leftover ragu and baking it. Yum, I thought but who has leftover ragu laying about?

Yesterday it turns out I had the 'perfect storm' of leftovers. Ragu in the freezer (made slowly using Mario Bartoli's recipe). Polenta leftover from last Sunday's dinner. Lots of mozzarella cheese. Ricotta cheese which needed to be used up. It was all good!

I put some tomato sauce on the bottom of a oven proof dish. I sliced the polenta quite thin and placed it over the sauce.  l then layered the polenta with the ragu, sprinkled it with grated mozzarella, and then another layer of polenta. For the next layer I used the ricotta mixed with some Italian herbs, an egg and Parmesan cheese. More polenta covered with ragu and cheese. The finally layer was polenta , ragu, and cheese.

100_2015_1 I baked it in a 350 degree over for an hour.

It was amazing!

    We left the snow behind and headed to California for a long weekend of fun. We shoppedm toured wineries, tasted olive oil, met up with good friends, and ate some wonderful food. I can't wait for slow bowl 2009.
