Last week I posted about a cooking class that we had attended. I have since received many requests for the strawberry cucumber soup recipe, so here you go. I made this for dinner last night and everyone loved it - in fact I had another request for the recipe.
Summer soups are cool and light, making use of the fresh ingredients that are so readily available; I would never make this soup in the dead of winter with fruit that had no taste. This soup comes together in NO time at all - in fact I think I had it ready in about 20 minutes and most of that wa sin peeliong and chopping fruit. I also appreciated the fact that you don't have to turn on the stove - perfect in the summer.
This soup can be made low-fat if you use the appropriate ingredients. I used fat free yogurt and sour cream. It is sweetened with apple juice and honey so it is good for you there as well.
The recipe is very forgiving and you could alter the amounts of things without measurably impacting the final taste.
Strawberry Cucumber Soup
1 pint fresh ripe strawberries
1 English cucumber, washed and cut into chunks
1 honeydew melon peeled, cored, and cut into chunks
1 pint of plain yogurt
2 tbsp sour cream
1 tbsp honey
2 tbsp chopped mint
2 cups apple juice
salt and pepper to taste
Place the washed and hulled strawberries, cucumber and melon (I used half honeydew and half cantaloupe) into a blender. Blend until chopped (you can puree finely or leave small chunks depending upon your preference).
Add the yogurt, honey, sour cream, and apple juice.
Blend again until smooth.
Adjust the seasonings with salt and pepper (I didn't use any at all).
Serve in bowls. Float a small scoop of melon sorbet (I use mango gelato) in the centre of the soup. Garnish with chopped mint.

I have been searching for a good Strawberry and Cucumber soup since the late 1970s when I was served this delectable concoction at Bewick's in London -- it has remained one of the most memorable culinary encounters in my life, and now I can't wait to try this recipe!
