Sunday mornings are generally the one day of the week where we enjoy a nice breakfast. The rest of the time we gulp down a bowl of cereal in 5 minutes and race off to catch the train into the city. We sit and enjoy a good meal, the paper, some music, and quality company.
We made these a few weeks back and were quite impressed with the flavour - such a difference from what you get from a boxed mix.

Strawberry Buttermilk Pancakes
1 c flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp sugar
1 tsp cinnamon
1 tsp vanilla
1 egg
1 /2 c buttermilk
1/4 c butter
1 cup diced fresh strawberries
In a medium sizee bowl combine the dry ingredients, stirring well.
In a separate bowl, combine the eggs, buttermilk, water, oil, and vanilla.
Pour the liquid mixture into flour mixture. add the diced strawberries.
Gently mix until just combined - it is ok if there are still lumps of flours in the batter - like most quickbreads they will 'cook out'.
Spoon onto a hot griddle and cook the pancakes until the tops bubble, then flip.
