This recipe sounds really good. I always seem to have coconut milk left over (I've actually been freezing the leftovers, and it works just fine)-nice to find a recipe that calls for just a small amount also.

Looks beautiful and so good. You continually amaze me with your resourcefulness and creative use of things like leftover coconut milk.

That sounds great. I cook a lot of shrimp--we have great local sources--and I'm always looking for a new idea. Thanks.

girasoli

This looks sooo good! Definitely a recipe to copy and try sometime. Thanks for posting it!

This was a great way to use up leftover coconut milk. We always have shrimp on hand so it was a 'no-brainer' to try this. The best thing though was that it was quick to make - perfect for after a long day of work.

It's Lent, and I am so tired of all the fish already...LOL. This, however, looks like a fine way to spice up mealtime...am stealing this one...thanks.

Jerry

Kayte - I hope that the guys at home like spicy food because this has a bite to it . . . we loved it though!

girasoli

I just made this and it is wonderful! Couldn't find cilantro though but still good without. Will have to try it again when cilantro is available. Thank for the recipe!

Jerry

Girasoli - glad that you liked them. The cilantro really elevates the taste - mind you, we are cilantro fiends and think it elevates the taste of everything!
