This recipe sounds really good. I always seem to have coconut milk left over (I've actually been freezing the leftovers, and it works just fine)-nice to find a recipe that calls for just a small amount also.

This was a great way to use up leftover coconut milk. We always have shrimp on hand so it was a 'no-brainer' to try this. The best thing though was that it was quick to make - perfect for after a long day of work.


It's Lent, and I am so tired of all the fish already...LOL. This, however, looks like a fine way to spice up mealtime...am stealing this one...thanks.

I just made this and it is wonderful! Couldn't find cilantro though but still good without. Will have to try it again when cilantro is available. Thank for the recipe!


Girasoli - glad that you liked them. The cilantro really elevates the taste - mind you, we are cilantro fiends and think it elevates the taste of everything!
