Given the heat of the summer I haven't felt like firing up the oven/stove to do a lot of cooking. Today I managed to make some of my famous fig jam with balsamic vinegar and rosemary before I almost melted. Dinner had to be a no-cook affair.
I turned to this low-cal salad from the June Cooking Light magazine. It's packed with vegetable, Italian canned tuna, and dressed with a zesty vinaigrette. You might contemplate making this with regular canned tuna in water. Do not. Italian canned tuna is a wonderful thing - packed in heart healthy olive oil - it packs a wonderful flavour.
This is a perfect addition to your summer cooking - quick (it was on the table in less than 30 minutes), delicious, and low-cal (301 calories per serving).

Arugula, Italian Tuna, and White Bean Salad
3 tablespoons fresh lemon juice
1 1/2 tablespoons extra-virgin olive oil
1/2 teaspoon minced garlic
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon Dijon mustard
1 cup grape tomatoes, halved
1 cup thinly vertically sliced red onion
2 (6-ounce) cans Italian tuna packed in olive oil, drained and broken into chunks
1 (15-ounce) can cannellini beans, rinsed and drained
1 (5-ounce) package fresh baby arugula
2 ounces Parmigiano-Reggiano cheese, shavedWhisk together first 6 ingredients in a large bowl. Add tomatoes and next 4 ingredients (through arugula); toss. Top with cheese.

I love the addition of arugula to the basic tuna and bean salad. Now if someone could explain to me WHY oh WHY arugula here in the US costs 10X as much as it does in Italy! You'd think they were flying it over daily directly from Italy!

Quick and easy is my new summer mantra! Delicious doens't hurt either.
I wasn't aware that arugula is expensive in the US. I can generally get a huge plastic of it here for about $ 3.
