I mentioned the other day how the slowtravel gang were involved in a new weekly cook-a-thon. No, we won't be working through an entire cookbook for the next year and a half. This one is relatively easy - one of the group selects an ingredient and then the rest of the group needs to make a recipe utilizing that ingredient. The idea is that these are dishes that are grilled or you could serve at a BBQ.
Last week I made the grilled Italian Potatoes from the latest Food and Drink magazine published by the LCBO (Ontario's Liquor stores). I knew I would be in Denver on 'post day' so I brought along the picture and assumed that I could get the recipe online. Wrong.
Oh well. This was a delicious and no fuss way to prepare a side dish on the grill. I liked that there were next to no dishes used in the cooking (Paul liked that as well).
Grilled Italian Potatoes
1 1/2 lbs small new potatoes, scrubbed
12 cloves garlic, peeled
3 T olive oil
3 T freshly squeezed lemon juice
salt and freshly ground pepper
1/2 c grated parmesan cheese
2 T chopped basil
Preheat grill to high
Place potatoes in a disposable metal baking dish. Add garlic, olive oil, lemon juice, salt and pepper. Toss to coat.
Cover baking dish with foil and place on grill. Grill for 15 - 20 minutes, shaking pan occasionally, or until the potatoes are tender and lightly browned.
Remove the heat. Sprikle potatoes with cheese and basil. Toss until cheese is melted and the remaining ingredients are well combined.
Yum~ That Sounds like fun!

Sounds easy enough, and they look inviting and delicious. I have a similar recipe I do in the oven and never once thought to add lemon to that...I am a big fan of lemon, why didn't I think to do that before seeing it here? I will rectify that immediately. We are grilling tonight, these potatoes are on the menu! Thanks.
