We had a bit of a Mexican-themed feast tonight - it started with Paul wanting fish tacos for dinner. . . then I noticed my upcoming ingredient list for Flavors included cod and the rest was history.
I like to serve cole slaw with my grilled fish tacos - not only is it a great side but the crunchy cabbage is a brilliant addition to the tacos themselves. I searched online and found plenty of recipes for a mayo based salad - something I didn't want. Then I found this recipe for a lime-cumin vinaigrette dressed slaw and knew I had a winner. I liked that the salad had a variety of ingredients - many of the others just had cabbage. BORING
There was nothing boring about this slaw. Easy and quick to prepare, it packed a wonderful citrusy-spicy flavour. I followed the recipe as printed but added about 1/2 cup dried corn kernels that I had in the cupboard.
The other great thing about this recipe is that it is perfect for summer entertaining - you don't have to worry about mayo in the heat with this fantastic slaw.
Southwest Coleslaw
1 14 ounce package coleslaw mix (cabbage and carrots)
1 cup canned black beans, rinsed and drained
1/4 cup chopped fresh cilantro
1 medium tomato, seeded and diced
1/2 medium red onion, diced
1 jalapeno, seeded and finely diced
1 avocado, pitted, peeled and diced (optional)
Dressing:
1/2 cup fresh squeezed lime juice
2 tbsp unseasoned rice vinegar
2 tbsp olive oil
1/2 tsp ground cumin
3-4 tbsp honey, or 2-3 tbsp sugar
Whisk together.
Combine coleslaw mix, black beans, cilantro, tomato, red onion, jalapeno and avocado (optional) in large salad bowl.
Whisk together remaining ingredients in a small bowl. Pour over coleslaw and gently toss.
Serve immediately, or may be chilled slightly then served.
Very pretty, it is, too! I must have a dozen slaw recipes that I use from May through October, but I don't have a single Mexican Slaw one...until now, that is...thanks, we will give this a try. I'm still out on the whole Fish Taco craze...just not sure those things belong together, but I'm trying to work toward acceptance. Okay...just a little trying.

The nice thing about this is that it gets better and better - we had some for lunch today and it was brilliant! Love when leftovers taste better than they did the first time.
