I decided one night last week to make a recipe from the June Cooking Light magazine that I had bookmarked - Moroccan Chicken Skewers. The online reviews were extremely positive and the ingredients were all at hand so the decision was an easy one. I put the chidken to marinate before I went to work and when I came home it was a quick thing to pull the skewers togther.
If you don't have time to marinate the chicken prior to heading out the door then save this one for the weekend.
What a great recipe! The marinade was amazing . . . sooo flavorful with a little kick. The recipe calls the skewers 'spicy' - I wouldn't say they were all that spicy. Flavourful with a wee burn yes, spicy, nope. Others, who run from a bit of heat, might think differently.
We had an interesting moment while we were eating. Paul glanced up and said 'these are amazing, where did you buy them?'
Apparently anything that amazing could not have come from our kitchen. ARGH
I suppose praise is praise, even the back-handed type . . .
Spicy Moroccan Chicken Skewers
1 1/2 tablespoons minced fresh garlic
1 1/2 tablespoons chile paste (such as sambal oelek)
2 tablespoons
olive oil
1 teaspoon ground cumin
1/2 teaspoon ground coriander
5/8 teaspoon
kosher salt, divided
4 skinless, boneless chicken thighs, cut into 30 pieces
1/2 yellow bell pepper, cut into 12 pieces
12 cherry tomatoes
Cooking spray
Combine first 5 ingredients in a small bowl; stir in 1/8 teaspoon salt. Scrape mixture into a zip-top plastic bag. Add chicken; seal. Marinate in refrigerator 2 hours, turning after 1 hour.
Immerse 12 (8-inch) wooden skewers in water; soak 30 minutes. Drain and pat dry.
Preheat the grill to medium-high heat.
Remove chicken from marinade; discard marinade. Thread 3 chicken pieces, 1 pepper piece, and 1 tomato alternately onto each skewer, beginning and ending with chicken; sprinkle evenly with remaining 1/2 teaspoon salt. Arrange skewers on grill rack coated with cooking spray; grill 4 minutes on each side or until done.
They do sound good Jerry and perfect for the season.
