We have several birthdays in our Virtual Supper Club in the month of September . . . so we are celebrating birthdays with food - well, food and drink on my part. When I heard the word celebrating I immediately thought of champagne.
I found this recipe for a Champagne Pomegranate Cocktail and was set. this recipe was a tad unusual in that it contained some unexpected ingredients - brandy and ginger ale to be precise. When I first saw the recipe I figured it was just champagne and pomegranate juice. So I meausred a few more ingredients. The end result was amazing!
Note - I garnished things with some fresh mint from the garden.
Happy birthday to all of the September birthdays - I raised a glass (or 4) to you . . .
Champagne Pomegranate Cocktail
4 cups crushed ice
2 cups pomegranate juice
1/2 cup ginger ale
1/4 cup brandy
1 (750-milliliter) bottle Champagne or sparkling wine
Pomegranate seeds (optional)
Combine the first 5 ingredients in a pitcher. Pour about 1 cup of the Champagne mixture into each of 8 glasses. Garnish with seeds, if desired.

Giz is bringing dessert, with Peach Ice Cream.
Sandi brought some dessert as well - lemon bars.
You can raise a glass in one hand I'll raise it in another Jerry. This does look delicious and very festive!
