Paul resuced this recipe from the 'pile of obscurity' AKA the pile of recipes I print off but never get around to cooking. This one was printed off back in 2011 and finally made in 2013. I can't figure out what took so long - what is not to love about this - salmon, bacon, honey, balsamic vinegar, and rosemary? All things we love.
I had high hopes with Paolo declared that this was one of the dishes he planned on making.
High hopes can be a curious thing - they can be dashed or they can be realized. In some rare cases they are dashed in a good way and the results were better than you'd imagine. Such was the case with this recipe - originally from the folks at Fine Cooking.
This was so easy to make and has such great flavor. The bacon, while adding flavor to both the salmon and the simple sauce, also adds a crisp cap to the fish (something we love). While this is easy enough and quick enough to make on a weeknight (as we did after a rather hellish day of work) it would also impress company at dinner time!
What is not to love about that?
Salmon Seared on Bacon with Balsamic Vinegar, Honey, and Rosemary
1/4 cup balsamic vinegar
1 Tbs. honey
1/2 tsp. finely chopped fresh rosemary
2 slices bacon
Four 6-oz. skin-on, scaled, center-cut salmon fillets
Kosher salt and freshly ground black pepper
In a liquid measuring cup, combine the vinegar, honey, rosemary, and 2 Tbs. water.
Cut the bacon slices in half crosswise. Lay a slice on the flesh side of each piece of salmon and arrange the salmon, bacon side down, in a 12-inch heavy-duty nonstick skillet. Sprinkle the salmon skin with salt and pepper.
Set the skillet over medium-high heat and cook until the bacon is golden and crisp, 4 to 5 minutes from when it begins to sizzle. Turn the salmon and continue to cook until the skin is crisp and the salmon is just cooked through, 4 to 5 minutes more.
Take the skillet off the heat and transfer the salmon to a platter. Pour off the fat and return the skillet to medium-high heat. Stir the vinegar mixture well and add it to the skillet. Simmer until slightly thickened, 1 to 2 minutes. Pour over the salmon and serve.

Bacon and salmon...I've never thought to pair the two for some reason but now that I see it, it looks like it has definite possibilities as the guys here are crazy about bacon (they are still trying to get me to make that crazy Turtle Burger you featured last year believe it or not). Nice recipe.
