Lately we have cut back on the groceries we are buying and are challenging ourselves to eat what we find in the freezer. We have two freezers, there are two of us . . . we could eat the contents of those freezers for the next year and not go hungry!
In the one freezer I found 20 salmon fillets. Apparently there was a great sale on or I got confused when I was in Costco (or a combination of the two). Anyway, it was time to cook up some salmon!
Paul selected this recipe from the folks at Cooking Light. While the recipe calls for cooking the salmon in a grill pan we took advantage of the warm fall that we're having and grilled it outside. I think it was probably better grilled outside but we'll have to try it in a grill pan to do a real comparison.
It was quick to prepare and the flavour -with those fresh ingredients - just shone! Better yet, it came in at less than 300 calories per serving.
Grilled Salmon with Garlic, Lemon, and Basil
2 tablespoons chopped fresh basil
2 tablespoons fresh lemon juice
1 tablespoon extravirgin olive oil
1/2 teaspoon grated lemon rind
2 garlic cloves, minced
Cooking spray
4 (6-ounce) salmon fillets
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
To prepare sauce, combine first 5 ingredients in a small bowl; set aside.
To prepare fish, heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray.
Sprinkle fish evenly with salt and pepper; add fish to pan. Cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with sauce.
Yum Jerry. I don't believe I am grilling but it has been perfect weather for salmon.

I actually find this weather is better for grilling salmon - when it is cold the BBQ never gets as hot as it does in the summer. No risk of over cooking this way.
