From time-to-time I find myself craving some of the cookies that my grandmothers would make years ago. I am not sure which one made haystacks but I remember them as the cookie I'd sneak from the cookie platter every year.
I LOVED these things.
I recently looked through a magazine that featured pictures of retro cookies and haystacks were there. Suddenly all of those happy childhood memories came flooding back and I had to make some.
Happily they were every bit as good as I remembered.
Haystacks
1 cup (6 ounces) butterscotch chips
1/2 cup peanut butter
6 oz chow mein noodles (they come in cans in the US but not here)
Line two baking sheets with parchment or waxed paper.
In a large, microwave-safe bowl, heat the butterscotch chips in the microwave in 30-second intervals, stirring in between, until melted and smooth. Stir in the peanut butter until well blended. Add the chow mein noodles. Toss gently until thoroughly coated.
Drop by rounded tablespoonfuls onto the prepared baking sheets. Haystacks will firm up as they cool.
Double boiler option: Melt the chips over simmering water, stirring until smooth. Remove the pot from the heat and stir in the peanut butter. Transfer the mixture to large mixing bowl. Add the chow mein noodles and proceed as above.
Haystacks of my childhood involved coconut and cocoa but these would be just as addicting for me Jerry.

Ohhh - I had forgotten about those bellini. Now I have 'the cravings'!
I also have 15 types of slice and bake cookies all shaped into logs and wrapped up in foil in the freezer Michele.
