Yesterday was a bit of a crazy day for me - we were having pe3ople over for dinner . . . I was working . . . I had grandiose plans for providing treats for my colleagues at work. Lots to do and little time to do it. Because of this we scaled things back a bit . . .
I raced home early and by 4:00 had everything prepped:
From left to right - the bread for the ruben dip, the pot of dip (awaiting cheese and melting), colcannon pie at the back, the corned beef ready to reheat in the oven and glaze, and carrots awaiting roasting.
With all this ready I focused on the table.
Our guests arrived at 6:00. We started off with the rueben dip and an Irish cheddar cheese and bacon dip. Sadly I didn't get pics of those but suffice to saw they were both yummy - so yummy that I didn't really want any dinner at that point.
Nonetheless, we moved into the dinning room for the main 'event'.

Dessert was a key lime tart (forgot pics).
I have to say - after a busy day like that I am wiped today. :-) That being said, it was worth it!! :-)
