Last Saturday we got home from seeing a play at 5. Dinner was supposed to be a smoked pork roast - there was no way that was happening! I was relaxing in the family room when a post about 6 minute macaroni and cheese popped up on my iPad. I had all of the ingredients so thought 'dinner!'.
Of course it takes more than 6 minutes - you have to find the ingredients, measure everything out, the Instant Pot has to come to pressure . . . However, it was VERY quick. The result was good - not 'I'll spend my afternoon grating my own cheese, make a bechamel sauce, and lovingly bake the casserole in the oven for an hour' good, but who has time for that at 5:30 on a Saturday night?
The recipe called for bacon but 'someone' in this house had eaten it. I had some chopped ham in the freezer so we used that instead.
6 Minute Macaroni and Cheese
2 cups macaroni
2 cups chicken broth
1 cup water
1/4 cup butter
2 tbsp grated Parmesan cheese
2 oz cream cheese
2 cups grated old cheddar cheese
6 slices cooked bacon, crumbled (we used 1/2 cup chopped ham)
Put the first 5 ingredients in the Instant Pot. seal. Set timer for 6 minutes. When the cooking cycle is complete perform a quick release of the pressure.
Stir in the cream cheese and the shredded cheese.
When smooth, stir in the chopped up bacon.
